Food science is a multidisciplinary field covering food chemistry, food microbiology, food safety, post-harvest processing, nutrition, food quality assessment, functional foods and nutraceuticals. Students develop an in-depth understanding of the science behind food through theoretical study and hands-on laboratory work.
The Bachelor of Science (Honours) Food Science examines the journey of food from farm to fork. Students learn about raw food materials, food processing, ingredient interactions, storage, food risk assessment, laboratory analysis and the proper operation of food-processing equipment.
The programme also provides opportunities to develop new food products, improve production yield, quality and shelf life, and evaluate consumer preferences through sensory testing. Practical learning is supported by food-processing and sensory laboratories, together with industry visits that expose students to real working practices.
